Recipe: Aamras and Puran Pol

  1. Rinse the chana dal thoroughly and soak it in water for at least 4 hours or overnight.

  2. Drain the soaked dal and pressure cook with enough water until soft and well-cooked (about 3-4 whistles). Alternatively, you can cook it in a saucepan until very soft.

  3. Once cooked, drain any excess water and mash the dal well.

  4. In a separate pan, melt the jaggery with a little water to form a syrup. Strain to remove impurities if needed.

  5. Add the mashed dal to the jaggery syrup and cook on low heat, stirring continuously until the mixture thickens and comes together like a soft dough.

  6. Add cardamom powder and nutmeg powder (if using) for flavor. Mix well and remove from heat. Let it cool.


2. Making the Dough:


  1. In a mixing bowl, combine whole wheat flour, a pinch of salt, and enough water to make a soft, pliable dough.

  2. Knead the dough for a few minutes until smooth. Coat with a little ghee or oil, cover, and let it rest for about 30 minutes.


3. Assembling and Cooking:


  1. Divide the dough into small lemon-sized balls.

  2. Take one dough ball, flatten it, and place a portion of the cooled puran filling in the center.

  3. Gather the edges of the dough towards the center to cover the filling completely. Pinch off any excess dough.

  4. Gently roll out the stuffed dough ball into a circle using a rolling pin, dusting with flour as needed to prevent sticking.

  5. Heat a griddle (tawa) over medium heat. Place the rolled puran poli on the hot griddle.

  6. Cook until golden brown spots appear on one side, then flip and cook the other side. Apply ghee or oil on both sides while cooking.

  7. Remove from heat and repeat with the remaining dough and filling.
