Puran Poli, known as Vedmi in Gujarat, is a traditional sweet flatbread filled with a spiced lentil mixture. This delicacy is especially popular during festivals and special occasions.

The Gujarati version stands out for its use of toor dal (split pigeon peas) and a blend of jaggery and sugar, offering a unique taste and texture.

For the Filling (Puran):
1 cup toor dal (split pigeon peas)
1 cup jaggery, grated
6-7 saffron strands, soaked in water
¼ teaspoon nutmeg powder
¼ teaspoon cardamom powder
2 tablespoons ghee
For the Dough: puran poli
2 cups whole wheat flour
1 tablespoon cooking oil
¾ cup water (adjust as needed)

Prepare the Filling:
Soak toor dal for 1 hour.
Cook the dal with 1½ cups of water until soft.
Mash the cooked dal into a smooth paste.
In a pan, combine the mashed dal and jaggery. Cook until the mixture thickens and starts leaving the sides of the pan.
Add saffron water, nutmeg powder, and cardamom powder. Mix well.
Stir in 2 tablespoons of ghee. Allow the mixture to cool.
Prepare the Dough:
In a bowl, mix whole wheat flour and cooking oil.
Gradually add water and knead into a soft dough.
Cover and let it rest for 15 minutes.
Assemble the Puran Poli:
Divide the dough into equal portions.
Roll out each portion into a small circle.
Place a spoonful of the filling in the center.
Bring the edges together to seal the filling inside.
Gently roll out the stuffed dough into a flat circle.
Cook the Puran Poli:
Heat a tawa (griddle) over medium heat.
Place the rolled-out puran poli on the tawa.
Cook until golden brown spots appear on both sides, applying ghee as needed.
Serve:
